Zucchini Recipe

This recipe is carefully crafted to be used easily with Cooking with Amma Zucchini Spice Mix

What You Need

  • 1 packet of Zucchini Spice Mix (included in Cooking with Amma Zucchini Spice Mix packaging)
  • 1 1/2 cup chickpea flour
  • 1/4 cup chopped fresh cilantro
  • 2 lbs. zucchini
  • Water
  • Vegetable oil
  • 2 cups cornmeal

Directions

  1. Peel and shred 2 lbs. of zucchini
  2. Softly squeeze zucchini between your palms to remove excess water and place in a bowl
  3. Add 1 1/2 cup chickpea flour, 1 Zucchini Spice Mix (included in packet), and 1/4 cup fresh cilantro into the bowl and mix well with the zucchini
  4. Scoop out the mixture with an ice cream scooper and form slightly flattened patties
  5. Mixture should be moist enough to form a ball, so add a few tbsp. of water if needed
  6. Roll patties on both sides in the 2 cups of cornmeal to coat the whole patty
  7. Add vegetable oil to skillet (enough to cover the surface of the skillet) and heat on medium-high
  8. Place patties to heated skillet with space between each patty; gently flatten each patty with spatula.
  9. Brown each side of the patties
  10. Serve patties with ketchup or use the patties in a sandwich with fresh tomatoes and lettuce
